1 Cup Cassava Flour (also works with whole wheat / regular flour)
1/2 tsp. baking soda
1 tsp. baking powder
1/4 cup maple syrup
1/2 cup plant based milk
2 tbsp. sunflower butter / almond butter / cashew butter
1 tsp. vanilla extract (optional)
1 medium banana mashed
1 tbsp. maca powder
1/2 Loving Earth Creamy Mylk / Dark Chocolate (or both!)
pinch of himalayan pink salt
preheat oven to 350 degrees. mix all ingredients together in 1 bowl. grease muffin tin with coconut oil and divide batter into 12 full scale muffins or up to 18 mini muffins. bake for 10-15 minutes or until exterior looks golden and center is fully cooked. split open and enjoy the yumminess!
